Ice Cream Doesn’t Have to be Unhealthy

Who says that ice cream has to be unhealthy?  Ciara Hyatt, our food columnist from Homemade Takeout, has created a very tasty ice cream without all the fat:

Not only am I always in the kitchen trying my hand at new recipes as well as old favorites, I’m also always on the lookout for healthy meal ideas. So the other night when I couldn’t sleep, naturally I turned on a cooking show, and to my delight, they were making healthy “ice cream!” I couldn’t wait to try my hand at a similar creation and see how I could make it my own.

I was pleasantly surprised at the outcome and I am happy to say, I have been enjoying it daily as a sweet treat on these hot summer days. You have to try this recipe and then get creative with all the variations you can do with it.

Healthy Chocolate “Ice Cream”

4 frozen bananas (peel, dice, freeze overnight)
2 tablespoons unsweetened cocoa powder
1 tsp vanilla extract
1 tbsp semi-sweet or dark mini chocolate chips

Place in food processor and blend until smooth and creamy.
Add a splash of unsweetened almond milk (or any kind of milk) if mixture is too thick.
Once blended, place in freezer to harden and then scoop out in a bowl or in your favorite cone.

Tip: I’ve tried this a few different ways, with frozen strawberries and strawberry extract, or a tropical flavor- mango, pineapple and coconut extract. They are all delicious and worth trying but the chocolate is the most like “ice cream.” Enjoy!
