Peanut Butter and Chocolate Chips Create Very Tasty Cookie

There’s nothing like a warm and soft peanut butter and chocolate chip cookie to satisfy anyone’s sweet tooth.  And, Ciara Hyatt, our food columnist from Homemade Takeout, sent in one incredibly tasty cookie recipe:

Father’s Day was full of people to celebrate. I had the privilege of hosting dinner for my husband, my father, and my father-in-love.

When I think summer time foods, I can’t get away from BBQ. So that’s just what I did, BBQ’d chicken, pulled pork, potato salad, macaroni and cheese, cowboy beans, sweet peach tea, and the best peanut butter-chocolate chip cookies you’ve ever eaten!

 

Here is the recipe for the cookies, but let me warn you, you won’t be able to eat just one!

 

Peanut Butter Chocolate Chip Cookies:

1 stick butter, softened
1/2 cup white sugar
1/3 cup brown sugar
3/4 cup peanut butter
1/2 tsp vanilla extract
1 egg
1 cup white all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup rolled oats
1 cup chocolate chips

 

Preheat oven to 350 degrees.
In a medium bowl, cream together butter and both sugars. Add to it, peanut butter, vanilla, and egg. Stir together until well blended and smooth.

 

 

 

 

 

In a separate bowl, combine flour, baking soda, and salt. Stir together and slowly add to the peanut butter mixture.

 

 

 

 

 

Fold in oats and chocolate chips until all ingredients are well incorporated.

 

 

 

 

 

 

 

Drop spoonfuls, evenly spaced about 1 inch apart, on a lightly greased cookie sheet.

 

 

 

 

 

 

 

Bake 350 for 10-12 minutes, until golden brown.
Cookies will be soft. To keep from breaking, let them sit on the pan to cool for a few minutes before transferring to a separate dish.

 

 

 

 

This recipe yields about 24 cookies, but I told everyone it makes 20 cookies (and I eat the other 4!) Enjoy!
