A Nutritious Smoothie to Start the Day

Ciara Hyatt from Homemade Takeout is our new food columnist, sharing all her great and tasty meals and dishes to the residents of Lawrenceburg.  She sent in her first recipe below as a nutritious way to the start the day:

Hello, I’m so glad you stopped by for the first entry in my new food column! First, I would like to tell you a little about myself. My name is Ciara, I am married, with 2 children, and I live on a 160 acre farm in Kentucky. I was a stay at home mom for 7 years until my kids were both in school, and then I started a takeout restaurant almost 4 years ago. I cook in my restaurant a few days a week where I make it very convenient for busy families to stop in and pickup “homemade takeout” food to take home and enjoy yummy meals with their family.

I grew up in the Texas Hill Country, where I enjoyed the many foods Texas has to offer, such as the little store down the road that had some of the best smoked brisket around and where you could get the best tamales or flour tortillas at any Mexican restaurant that you went to. But I didn’t have to go to a restaurant to eat such wonderful foods, because I was lucky enough to have a momma with an Italian heritage who could cook with the best of them. And since there were 9 of us, (dad, mom, 5 girls and 2 boys), our table was always full of delicious dinners, like the best spaghetti and meatballs, manicotti, lasagna, and much more.

I moved to Kentucky with my family when I was 15, and I was introduced to a new style of cooking by my mother in law, what I like to call, down home country cookin’. It is all of these wonderful people and places who have influenced my cooking style and helped my passion for good food and cooking grow into what it is today.

Each entry I make into this column will be different. From light, healthy, clean recipes, to rich, filling, and hearty meals. I am so excited to share my recipes with you and let you get to know me and some of my favorite dishes!

Today, I wanted to start with something simple. It is how I usually start my day and possibly the reason I don’t feel so bad if I have a few cheat meals now and again. It is just a simple smoothie but one that I never get tired of. I will probably share many smoothie recipes over time, because I’m always looking for another interesting twist on the way I start my morning.

Green Smoothie:
1 cup unsweetened almond milk
2 cups fresh baby kale/baby spinach mix
1 frozen banana (I peel, slice, and freeze bananas so they’re ready in the morning)
2 tbsp peanut butter
1 tsp ground cinnamon
1 tbsp ground flax seed
3 ice cubes

Blend until smooth and enjoy your morning!
